In Italy “Ciambella” is an actual cake category. Ciambella is basically any donut shaped cake. The filling/flavor can vary a lot from a traditional vanilla ciambella to marbled chocolate to fruity and so on. Today I added some Fall flavors to my ciambella and enjoyed it with some friends.
This recipe is definitely a “bake with me” one.
For toddlers: prepare all the ingredients measured and lined in front of the bowl. Assist your little one breaking the eggs and adding all the ingredients in line, one after the other.
If cracking eggs is a bit too premature for your toddler, crack them apart and add them into a cup so that they will only need to pour them in the bowl.
For older kids: measuring is a math skill. Why don’t let them exercise with measurements and also with different measuring systems. I love to let my Alex play with the scale that switches from grams to oz and vice versa. Math is everywhere in our daily life, even and mainly in baking!!

- 3ozwalnuts
- 2ozdried cranberries
- 1mediumapple, peeled, cored and chopped
- 2mediumpears, peeled, cored and chopped
- 1/3cupwater
- 1cupsugar
- 3mediumeggs
- 1/2cupcoconut oil
- 2cupsall purpose flour
- 1tspbaking powder
- 1/2tspbaking soda
- 1/4tspsea salt
Instructions

Start mixing together the eggs with the sugar up until they will become foamy and pale yellow.

Add the other wet ingredients: water, coconut oil.

Add the dry ingredients: flour, baking soda, baking powder, salt

Add the remaining ingredients: walnuts, cranberries, fruit chopped in small pieces

Bake in preheated oven to 400F for 45 min. Let it cool down out of the oven 10 min before serving.
CAN I SUBSTITUTE CRANBERRIES?
I used dried cranberries with an orange zest infusion, but regular dried cranberries will work too. You will only need to add the zest of one orange to the mix.
If you don’t have dried cranberries available, raisins are a lovely substitution.
CAN I SUBSTITUTE COCONUT OIL?
Yes, you can use either butter oil vegetable oil, same quantities.
